This is not an option, It is mandantory under EU law to have this. The moment a EU citizen by any chance is added to your list, he has the legal right to be deleted, otherwise you would need to pay a fine. I understand that it gives some problems to your data model. As a work around, you could offer the possibility to change the name to deletedName1, deleted@deletedemail.com in your database or similar and then filter out these names when you do something with the records in that database.
